Merry Pancake Day!
So, I love pancake day but not crepes. I would say that their main offense to me is that they are too skinny, but since I am feeling honest today I will have to admit that I am entirely incapable of making one. But back to skinny, waify, floppy ‘pancakes’ that are had here on Shrove Tuesday. In my opinion pancakes are fat. They have buttermilk, bananas and maple syrup. It must be the canadian half of me.
Some of my favourite moments in my entire life have consisted of wakening to the smell of fresh coffee made by my pop, eating coconut pancakes made by my mum, sitting on their porch in the sun, talking about everything and anything. Now I think of it, I miss them a great deal just now.
So in tribute to my fam and my canadian heritage here is a little recipe for some thick coconut, cinnamon and banana pancakes.
P.s. If these pancakes were a man I would kiss them right on the face!
Coconut Cinnamon and Banana Pancakes (should make enough for four)
1 1/3 Cup of Plain Flour
2 Tablespoons Sugar
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
2 pinches of salt
1 cup of buttermilk … or normal milk (may need to add another dash or two)
1. In one bowl whisk (I love that word!) Flour, Sugar, Baking Powder, Bicarb Soda, Salt, Cinnamon and Coconut.
2. In another bowl whisk oil, vanilla extract and buttermilk.
3. Combine the two bowls mixture will be thick as mate, fold in some banana (or any fruit you wish!)
4. Heat a little oil in a frying pan and cook batter over a medium heat until you see the magic bubbles on top.
Here is the fun bit..
5. FLIP me baby one more time. Pancakes will pretty much taste good all the time but they look prettiest golden brown.
Serve with more banana and maple syrup.
You can pretty much add anything you want, blueberries, strawberries, raspberries, chocolate, the frying pan is your oyster!!
